Dulse is a red seaweed that grows attached to rocks in the intertidal zone of the North Atlantic, particularly Canada’s Bay of Fundy, home of the world’s highest tides. Fronds may vary in color from rose to reddish-purple, and range from about 20 to 40 cm (8″ to 16″). Bay of Fundy dulse is hand harvested, usually from June-September, during low tide and naturally air-dried on netting or directly on the shoreline rocks. Dulse grows quickly in the summer and the same shores may be picked every two weeks, corresponding to the new and full moons. Harvesters remove only a portion of the dulse, leaving the holdfasts and part of the fronds. This allows the plant to continue growing.
Dulse is sold as either whole dried fronds or ground into granular or powdered form. Very high in protein (22%) and other essential nutrients, it is eaten as a snack food or used in traditional chowders, stews and creams as a natural flavoring and thickener.
A traditional food of the First Nations Mi’kmag, dulse (wadakuna’sikjech in Mi’kmag) was also an important food source for the Acadians and early Scottish and Irish settlers. Declining popularity in today’s modern marketplace and the always-present threat from shoreline pollution are both problems for this wonderful, natural Canadian Maritime foodstuff.

What is the expiry time frame for fundy dulse?

Our apologies for this very delayed response. Dulse is good for several months at room temperature, but be sure to keep it at a low humidity (say in an airtight container).
